There are numerous articles floating throughout the internet pertaining to sustainability and its importance to the environment, and for the growth and prosperity of local businesses. In the trying times that we are in, more than ever, it is important to reiterate and enact the knowledge (well, as much as possible) that we have learned from sustainability thus far. Both the environment and local businesses need our support. Here at GKM, we are constantly evolving and growing within our constraints for sustainability. We have developed a system to promote sustainability within our business and therefore, within the amazing organizations of which we work hand in hand with. 1. Locally Sourced FoodOur ultimate goal is to source at least 20% of food from vendors within 2 years from the start of operation. We want to be supplied by local members of the community who are practicing sustainable farming techniques. 2. Zero WasteWe hope to strive for zero waste. We utilize a hierarchy for reducing and recycling food scraps and other organic discards. Our goal is to not just compost waste, but to focus on more preferable methods like source reduction or turning waste into animal feed. 3. Locally Roasted CoffeeSupplying locally roasted coffee not only helps local businesses, but most would agree it tastes much better! 4. EducationEducation about sustainability is an important factor for its success. Through social media channels, in-person classes, and email campaigns, GKM will provide the resources to teach students what it means to be a responsible global citizen. 5. GardensDepending on the size and constraints of the facility we are servicing, GKM wants to establish an on-grounds garden to provide a portion of fresh produce and herbs. If this were a college, for example, it would be managed by students to learn about sustainability and educate where food comes from.
